Thai Peanut Sauce {Vegan}

Thai Peanut Sauce
Adapted from Peanut Sauce.
Ingredients
  • 1 tablespoon peanut oil
  • 1 tablespoon curry paste
  • 1/4 cup coconut milk
  • 1/4 cup Easy Slow Cooker Vegetable Broth
  • 3 tablespoons "fish" sauce:
    • 1 tablespoon soy sauce
    • 2 tablespoons water
    • 1/3 chopped sun-dried tomato
    • dash of kelp granules
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 1 tablespoon chili sauce
  • 2 tablespoons peanut butter
  • 1 teaspoon sesame oil
  • 2 tablespoons peanuts (roasted and crushed)
Directions
Heat oil. Add curry paste and saute. Add all other ingredients and simmer to thicken, about 2-3 minutes.
