Meatless/Vegan Monday Link-up #35: Stuffed Acorn Squash

Day 269.

I'm over at OAMM again today with a great holiday centerpiece recipe, Vegan Stuffed Acorn Squash.

The Results
This is so beautiful and delicious. I love the bright orange squash, filled with delicious protein goodness. And, bonus, it's all Whole Foods. The kids thought it was really cool, too. You could serve each person one squash half as a main dish or serve it like a stuffing side dish for everyone. Yum.

  2. Hi Kristi, I love the stuffed acorn squash. We make one at home with roasted prunes and walnuts and it's super delicious. I love that this one uses quinoa! I again wasn't able to use the direct link to the post because it was too long. Is there a way to extend ( more characters) what your linky tool will except?

  3. I made stuffed acorn squash last night for dinner, and I forgot to get a picture of it when it was all done, then it was all gone. Yours looks very good! We would gobble that one up too.

    @France--I checked to see if there was a way to do that. There doesn't seem to be. The only suggestion I can think of is to link up a label search of your posts. Maybe throw on a "Meatless Monday" tag and link that label to the linky if your html address is too long?
