Fried Sweet Potato Skins {Vegan}


I was pureeing my sweet potatoes for Sweet Potato Mac & Cheese and didn't want to throw away the skins. They turned out so yummy, I had to share.


Fried Sweet Potato Skins
  • Sweet potato skins, cut lengthwise
  • cinnamon
  • sugar
Directions
Fry sweet potato skins in deep fryer or in a couple inches of oil in a pan, until crispy. Shake cinnamon and sugar on top. Devour.

  1. Do you use the skin skins or do you leave some of the "meat" on them? My husband would love these!

  2. I left a bit of meat on them so the skins wouldn't fall apart. They were super tasty, I hope he likes then if You make them. :)
