Eggplant Pizza {Vegan} and Meatless/Vegan Monday Link-up

Day 185.

I'm over at OAMM again today with Vegan Eggplant Pizza. I made our pizza with my usual Betty Crocker pizza crust. It's Red, White, and Almost Blue (Purple). So, you have an excuse to make it for Fourth of July dinner tonight.

The Results
Mmm...this was so incredibly good. Somehow even better than the bruschetta version. I'm sure the layer of cheese and the awesome pizza crust had something to do with that. The kids and I gobbled this up.
