Zucchini Pepperoni Recipe

Vegan Zucchini Pepperoni Recipe
Ingredients
1 medium zucchini, preferably yellow, sliced very thin (about 36 slices)
1/2 cup soy sauce
1/2 cup olive oil
1/4 cup water
1.5 teaspoon liquid smoke
1 teaspoon House seasoning
1 teaspoon cayenne pepper

Directions
Slice zucchini. Combine all other ingredients in a zipper bag. Marinate zucchini slices 3 hours or overnight in refrigerator.

Bake at 400 for 20 minutes, flipping slices halfway through.

Use as a pizza or sandwich topping or eat as-is.
