Black Forest Bacon Recipe

Black Forest Bacon 
Adapted from The Complete Guide to Vegan Substitutions
Meat Ingredients:
2 cups vital wheat gluten
1/2 cup whole wheat pastry flour
1 tablespoon garlic powder
1 tablespoon paprika
1 teaspoon ground pepper
1/4 cup oil
1/4 cup maple syrup
1 cup vegetable broth
2 tablespoons liquid smoke

Combine wet ingredients. Combine dry ingredients. Mix wet with dry until dough forms. Form into a log. Spray large piece of foil with cooking spray. Place log on foil.

Glaze Ingredients:
1/4 cup maple syrup
1/4 cup brown sugar
1-2 tablespoons water (if necessary, just enough to make glaze pourable)
1-2 tablespoons House seasoning
2 tablespoons liquid smoke

Mix all ingredients. Pour 1/2 mixture over log. Tightly seal foil package. Bake at 350 for 45 min. Remove from oven. Open packet and pour remaining sauce over log. Re-seal. Bake additional 10 min. Slice and add to recipes or eat as-is.
