Welcome to the weekly Meatless (Vegan) Monday Link-up and my vegan recipe for the week. Anyone with pollen allergies who lives in the South will empathize with me this week. I was completely knocked out on allergy medicine when it came to cooking time. My husband had to take over. And, while I gave him a vague outline of what I'd been planning to cook, I didn't remind him to stick to Vegan Monday guidelines. So, this week it's regular Meatless Monday at our house and we'll do a vegan meal another day. You can make it vegan easily by substituting "cheez" But, thanks to awesome hubby, we actually get to eat dinner and, by the time it was done, I could even taste it. Hooray!
Chicken Parmesan Casserole
2 C elbow noodles
2 C "chicken," cubed
2 C Mozzarella cheese
2 C Marinara sauce
1 C Bread crumbs
1/2 C Parmesan
1-2 Tbsp. Italian seasoning
Cook the noodles. Spray an 8 x 8 baking dish and preheat oven to 375. Combine noodles, chicken, half of cheese and marinara sauce. Mix all other ingredients and place on top. Bake for 15-20 minutes.
So simple and so delicious. I'm so glad I could breathe by the time this was finished. We all absolutely loved this dish.

This is not my usual Meatless Monday fare, but what an awesome breakfast treat. And, bonus for those with allergies, it's gluten-free.
